If you need a car to tow a car you can get away with full size SUV. I towed cars on a dolly with my 1999 Jeep Cherokee. It's a bit sketchy with that vehicle because of the short wheel base of the jeep, but doable on short distances.
If you go for a truck, you don't need anything more than a 1500 series. No need to pay 2500 series money for towing the car around F150, Ram 1500 or equivalent chevy will do the job no problem. Diesel trucks hold their value better. That is something to consider if you planning to sell the truck after you done with it, but they are not necessary to do the job, regular gas truck will manage it no problem.
If I was in your situation, I'd pick up an older chevy tahoe. You can get one of those for 5k or less. They have long wheel base and will be able to control a trailer no problem, plus there is all that space inside for parts, wheels, tires or what ever else you want. They can fit a 4x8 sheet of plywood. Terrible gas millage, but for short trips and minimal use, no problam.
Also Ford Excursion are cheap due to their 8mpg. Those things could tow plenty of G.

Plenty of trucks out there these days that can handle a trailer and 3K pound vehicle. I've towed my Mustang around with 1500 series Fords, Dodges, Chevys, a Titan, Explorer, etc. All handled it fine.
Really a personal opinion that only you can answer.
If i had to throw something out there....Ecoboost F150
