Healthy Pasta Dish

Made this the other day.

Boil the water for the pasta so you can dump the pasta in while preparing the vegs and chicken. I use Barilla Plus which I find to be the best whole wheat on the market. BTW I am Italian my mother was born there and father is 1st generation so I know pasta.

1.Heat a pan, and then add olive oil.
2.Grill some chicken breast or you can buy the Purdue pre cooked ones to save on time.
3.Take 1 Zucchini 1 Red pepper 1 Head of Broccoli.Chop the zucchini and pepper more fine and the broccoli bigger.
4.The chicken should be done almost done so remove it from pan.
5.Then add a bit more olive oil and add vegs. Cook for about 10 mins
6.Cut the chicken breasts into strips and add to vegs. Cook for 2 more Mins
7.Pasta should be done strain the water and put back into pot.
8.Before pouring vegs and chicken into pasta add a little more olive oil and a good amout of parmesan cheese.

Sounds delicious. Are you using wheat pasta? That also helps too.

Barilla Plus is a wheat pasta and it has omega 3's also its the best tasting "healthy pasta" imo.

I like this recipe because the lack of tomatos since most of the time I eat pasta with tomato sauce, which I also make homemade.

wouldn't Canola Oil be a better use for oil, since its lower fat than olive oil?

Olive oil is so much better for you because its just pressed olives. Its rich in Vitamin E, Vitamin K, Fatty Acids, and antioxidents. Canola is similar but its processed and has to be deodorized to give it a better taste.

Just salt, pepper, parmesan cheese, and the olive oil gives it a nice flavor. This is a really simple recipe but is very tasty. Ive gots lots more which are not as healthy. I can make pretty much anything Italian from fresh mozzarella to chicken fiorentina. So if you have any questions just ask.

I could use another homemade spagetti sauce. Looking for a more sweeter one than I make now. I use brown sugar. I would like another reciepe though to make from scratch.
