My "raid your pantry" minestrone soup
After stuffing my face with pounds of smoky meat products at my friend’s BBQ (Meat-o-Rama) on Saturday, I wanted to eat some veggies on Sunday.
I made a minestrone soup with a bunch of stuff from my pantry and bought a few more fresh veggies to throw in. It was delicious, very low fat, and high in fiber and nutrients. It is really easy to make and you can throw whatever you want in it. This is not really a recipe but more of a timeline of when to add ingredients. Heat up a large pot over low heat w/ 2 Tablespoons of olive oil. When hot, throw in 2 carrots, 2 stalks of celery, and 1 whole onion (all diced) and sweat them over low heat until soft and tender, about 10-15 min. Create a space in the bottom of the pot and put in 1 shallot and 3 cloves garlic (all minced). Stir it by itself (don’t mix it w/ the onion, celery, carrots) for 2-3 min. (you could also add ground turkey or beef that you cooked in another pan at this point) Deglaze pot with 1/2c of red wine (an Italian varietal like Chianti would work very nicely), and pour yourself a glass while you’re at it. After a couple minutes, put in a can of diced tomatoes and its juice, a small can of tomato paste, a can of condensed onion soup, some dried Italian herbs, and 1.5 c water. Bring to a boil. Add some whole wheat pasta (small pieces like fusilli, not long strands) and note the cooking time on the box. You’ll want to time the rest of the veggies so they are cooked by the time the pasta is done. Veggies: I threw in chopped up stalks of red chard soon after the pasta was thrown in. With about 4 minutes left, I threw in a can of precooked lentils, diced zucchini and the chard leaves. Other veggie ideas: kidney beans, cannelini (white) beans, split peas, cabbage, leeks, garbanzo beans, etc. The pasta helps thicken the soup a little and since there were so many veggies in it, it was more stewy than soupy. Ladle into bowls and then grate some parmesano regiano on top and crack some black pepper on top. If you have some good, flavorful EVOO, drizzle a little of that on top as well. You could serve some garlic bread with this but it is pretty hearty by itself.

I thought about taking a pic but didn't think anyone would care. I have leftovers so I'll take a pic tomorrow when I eat the rest. Mmmm.
