Going to be pretty traditional, for us Canadian whitebread folk, anyway.

Turkey, mashed potatoes, maybe some green beans...but my wife makes an amazing cranberry/pine nuts stuffing and I will not sit down at the table unless there are YAMS. Follow that up with some pumpkin pie.

Christmas Eve I will make manicotti for everyone, and Christmas morning my wife makes a wonderful quiche, which, being secure in my masculinity, I eat with great enjoyment.

Same here, just a traditional Christmas supper for us. I am actually having both sides of the family over or Christmas supper, so it should be interesting to say the least. Our supper will consist of

Two turkeys
mashed potatoes
lots of potato dressing
squash
corn
carrots
green beans
olives/pickles/cheeses
pumpkin pie
Champagne

I feel like I am forgetting something, but that's all I can remember.

^ We don't have yams, but we do have lots of cranberry sauce. Oh yeah, we always have minced meat pie with ice cream.

I'm going to dry-age a Prime Rib and roast that for Xmas. I followed the tips from Alton Brown and Chowhound. That reminds me, I better get that started tonight!

I'm not sure how good it will be, but we thought we would try a Turducken this year.

I guess they now have one that brings a quail and pig into the equation as well.

"Fowl De Cochon

Turducken not extreme enough for you? Try the Fowl de Cochon (Pig Turducken) - a boneless pig stuffed with a Turducken (Turkey, Duck, Chicken, Cajun Sausage) a quail and our famous cornbread dressing. Averages 35-40 lbs and feeds approximately 40-50 people. "

Hey, we're talkin' about Christmas dinner? I just talked to several of my family today and here's the menu:

Lechon FTW!
Pancit palabok
Relenong manok
Imbutido
Puto bung-bung (sp?)
Bibingka
Lumpiang shanghai
Garlic rice
Relenong bangus
Kare-kare
Honey baked ham

There's going to be about 60 people for dinner. I have a big family and there are a few who cannot make it.

My cholesterol's going through the roof, but that's okay for 1 night a year.
