Thumbs up What is your signature dish?

For those of you who enjoy cooking and creating different recipes, what would you say is your 'signature' dish? This would be your 'go-to' dish that you'd prepare to impress a date or if a famous chef came to your home. This doesn't have to be a super-fancy dish, but something that you've made at least a handful of times and knocks the socks off of your diners.

For me, I don't really have one! I usually like to make new things all the time so I don't repeat things that often. I'll have to think about it a little more and post back later.

PS - if you care to share the recipe of your signature dish with us, we'd love to see it!

For me, it would be either;

Chicken fried rice, Chicken stir fry, and homemade egg rolls

or

Butter Chicken, Basmati rice, and homemade vegetable samosas.

Mine would probably be either the chicken in a white wine cream sauce, or chicken marsala. My wife loves both, and always asks me to make them.

Of course, I LOVED the last time I made filet mignon.

I've tried a variety of homemade egg roll recipes over the years, but this one is the one I've stuck with. Btw, this is for chicken and vegetable eggrolls.

1/2 cup dried mushrooms
1 chicken breast, skin, split
1 clove garlic, minced
1 tablespoon oil
1 can 16-oz bean sprouts, drained
2 cup small spinach leaves
1/2 cup green onion thin sliced
1/2 cup bamboo shoots, thin sliced
2 tablespoons soy sauce
2 teaspoons cornstarch
1 teaspoon grated ginger root
1 teaspoon sugar
1/4 teaspoon salt
12 each egg roll skins
oil for deep-fat frying

Soak mushrooms in warm water for 30 minutes; drain and chop, discarding stems.

Chop chicken for filling. Stir-fry chicken and garlic quickly in 1 T hot oil about 2 minutes.

Add vegetables, stir-fry about 3 minutes more.

Blend soy sauce into cornstarch; stir in ginger root, sugar and salt.

Stir into chicken minture; cook and stir until thickened. Cool.

Place egg roll skin with one point toward you. Spoon 1/4 cup filling diagonally across and just below center of skin.

Fold bottom point of skin over filling; tuck point under filling.

Fold side corners over, forming an envelope shape. Roll up.

Fry egg rolls, a few at a time, in deep hot oil (365 degrees) for 2-3 minutes or until golden brown.

Drain on paper towels.

Enjoy!
