Your Main Ingredient?

So for the chefs here, what is your main ingredient when cooking a meal? I realize that it's a very general question and will depend on the type of meal being cooked, however is there a certain thing that you always need to include in each of the dishes you cook?

For me, I would have to say it's garlic. I tend to cook a good portion of my meals with garlic. I just love the taste of it.

Absolutely it would be garlic, I think it is an ingredient that is incorporated into every dish.
Thinking about the common things I am always running out to get, they would be mushrooms (many varieties), shallots, spices (I am always running out of spices)

I have herbs right outside my patio door. There's nothing like fresh rosemary or oregano. I tried to grow garlic, but it seems I'm not that talented.....lol.
For my sauces I've also found something called Better than Bullion. It comes in chicken, vegetable, and beef. Just a touch adds a ton of flavor to any sauce.

Does anybody actually use MSG as an ingredient when cooking.

I don't, in fact it is against company policy.

I have been a host to several royal families and have seen their personal Chefs carry around brief cases of the stuff.

By the way, many foods have it naturally and food companies sneak it into their products that way,

Garlic for sure...as most said.

Outside of the common answers of spices and herbs though, I would probably say tomatoes. Fresh, canned, whatever. I uses tomatoes in lots of ways...lots of dishes...I just always seem to be including them somehow.

+1 on the garlic.

Beyond that I would say either fish sauce or soy sauce, but I think that's mostly due to my ethnic background.

I also like to use Adobo when I'm in need of an all purpose seasoning.

Oh and bean sprouts and tofu as well.... for some reason I like putting them into as many different dishes as I can. They both are pretty tasteless on there own, but when you add them in, they take on the flavors of the dishes you are preparing.

I would far from call myself a chef or even a cook for that matter but I would have to say that garlic and onion (onion powder in my case) are a staple for most everything. I am also a fan of soy sauce in somewhat unusual things. I almost never make anything with beef without at least a little soy sauce in it. It just seems to bring in a subtle punch of flavor without being obvious if used sparingly.

On a side note, I have enjoyed browsing this section and I look forward to more tips from the people who can actually say they cook. LOL
