Lets Talk CUTLERY!

What kind of cutlery are you currently using (Brand, Model) and give your opinions about them. I am currently using the J.A. Henckels International Classic 15-piece set and added an additional 7 inch hollow-edge santoku to the set. Had them since November 07' and still as sharp as the day I purchased them. I'd rate them 8/10, great for the price point ($250), very well balanced, holds an edge nicely, and they're forged.

I've got a cutlery block pretty much identical to the one in your picture, however I have no idea what brand it is. I'll go check and see what it is and update. It's a great set that we got as a wedding gift though.

Most Henckels are great knives. They have branched out and started selling lower price versions (J.A. Henckels International).
Do not buy them if they are made in China!

I love them because they keep an edge for a very long time. They are not as easy to resharpen as a Forchener when they lose there edge.

In the work place, I use forschners because of the price difference, when one mysteriously disappears, you don't cry.

The set I currently have is the International line, but I believe they're made in Spain IIRC.

Cutco. My bro worked for them over one summer so we got a good deal on them. Overall, they've held up quite well. I think they have a lifetime warranty so we need to send them in to be sharpened. Have had them for almost 10 years, never been sharpened and they're still doing a good job.

If they work for you, great.
I would not own a Cutco knife personally.

A few reasons are:

They are stamped, not forged.
They are only sold through a referral based direct marketing system
Cannot be sharpened by the consumer
Completely outperformed by many other knives.

The straight edge ones you can sharpen on your own like any other brand.
The Double-D edge you have to send in.....

I only have 3 knives, all Henckels 4 Star.
  • 7" Santoku
  • 8" Chef's Knife
  • 3" Hollow Edge Kudamono Paring Knife

I hardly ever use the Chef's Knife.

I have a set of the Henckel Professional S series knives and I love them. I use the steel on them once in a while and they are awesome.

One other knife I really like that I use for cleaning and steaking my bigger salmon I use a 10" Forschner Breaking knife. It works fantastically and keeps a pretty good edge after cutting through scales, bones etc.
