Veggies On The BBQ

I use my BBQ all year around as it's far and away my favorite way to cook food. Anyways, I also use my BBQ to cook most of my fresh veggies. My two favorite veggies on the BBQ are asparagus and zucchini. With asparagus, I wrap it up in tinfoil along with some olive oil, salt and pepper for about 10 mins or so. I cut the zucchini in long horizontal slices and just drizzle a little olive oil with some salt and pepper. Pretty basic I guess you could say, but it tastes damn good.

I also like to cut up mushrooms, peppers, garlic, and onions and wrap them up in tinfoil for a mixed veggie dish. They are very good with a nice steak.

What veggies do you guys/gals cook on the BBQ?

I love portebello mushrooms and zucchini marinated with the oil from sun dried tomatoes. If I feel creative, I'll slice the mushrooms and zucs up with the tomatoes and serve them that way. I've also grilled tomatillos, jalapeno peppers, garlic, and tomatoes for fresh red and green salsa which turned out super yummy.

^same as you. We haven't done any that way for a long time though. Are you going to be down here for the barbecue?

A touch of mozza cheese in with the mixed veggies is tasty too.

I usually throw on green onions, egg plant, cherry tomatos, onions, garlic, jalapenos, red peppers... that's just the usual.

I like all the things mentioned above with Balsamic Vinegar or Balsamic and Port Wine reduction on them.

I LOVE corn on the cob grilled directly on the grill. No wrapping or moisture necessary.

I'm going to try the corn. That sounds really good.

For the Balsamic and port reduction are you using anything else but those two things? I love both flavors and it sounds like a nice way to serve veggies.

Paula Deen made an awesome onion dish that i do every now and then.. you peel an onion, cut the top off of it, cut an "X" down the onion, drop some butter and a beef bullion cube into it, wrap it up in heay duty foil, drop into the coals. leave it there for a good 20 mins. and serve with ANYTHING!! I threw some rosemary and olive oil with the butter. it comes out like french onion soup. delicious

I've never been comfortable with cooking veggies on the barbecue. I'm definitely going to try the asparagus, and I love mushrooms.

Well I like wrapping asparagus in bacon (my stepmom actually does it). And pretty much what you said. You really have to grill corn on the cob, GREAT stuff.

I use equal parts of each and boil until it becomes a syrup.

You can add onions and celery if you want, I don't.

For a sweeter flavor you can add a touch of honey and I have heard of people adding vanilla. This would be good with lamb.

try to marinate your veggis in Italian dressing before cooking it. eggplant, corn with butter then some chili powder adn lemon=yummmmy. asparagus with olive oil and garlic, and the rest. you can basically cook anything you want on the grill.
