Mushrooms - What Kind Do You Buy?

I LOVE mushrooms, and cook with them quite frequently. Whether I cut some up with some onions and sautee them to put over a steak, wrap them in tinfoil and put them on the grille, or even in a salad, I just love mushrooms. I typically buy white mushrooms and sometimes portobellos, but would like to try some different types. What other type of mushrooms do you guys/gals usually cook with?

If you want to make a cream or white wine sauce, nothing beats a Morel in my opinion. They have a woodsy flavor and really go great with veal or chicken, A bit pricey though as they are a relative of the truffle.

Second on my list would be Chanterells. Mild in taste, but so great on a steak!

Some others:

Oyster (great with seafood, soups and chowders)
Cepes
Crimini
Porcini
Lobster
Wood Ear (you see these a lot in Asian cooking/soups)
Shiitake (breaded and fried, marinated, soups and casseroles)
Enoki (sanwiches and salads)

On a side note, I've never heard of Oyster and Lobster mushrooms. Though I am sure they don't actually taste like Oysters and Lobsters, they sound delicious.

Just for the heck of it, I figured I would check out what these Oyster and Lobster mushrooms look like.

It looks like Oyster mushrooms grow from trunks of trees.....interesting.

I don't know if I've ever seen these at my local market. I'll have to look next time I am there.

I love mushrooms! The Lobster mushroom gets it name because it is red in color. Oddly enough, it can have a seafood like taste.

Not really a mushroom though, it grows on mushrooms. I guess you could call it a parasite. That doesn't sound appetizing though, does it?

Parasite or not, if it remotely tastes like seafood I would love it.

Another word for Wood Ears is Black Fungus, that's not so appetizing either

I love mushrooms. Yum
We eat regular button mushrooms a few times a week. The next commonly eaten mushroom at my house is the Portabello and $hitakes once in a while
As 6MTzer said the morel is also one of my favorites. I was out in the bush looking for them this week, but it is still a bit early. I look forward to a few morel feasts every spring when they are growing in the woods and I am lucky enough to pick a bunch.
You probably remember this pic from last year after I picked a few.

Next on my list is that big round delicacy in the fall that we go out hunting for. That would be the Puffball. They taste great sliced and fried in butter.

I didn't know you could eat those! I loved to kick them when I was young.

I made some of those last week marinated in balsamic dressing, then stuffed with creamed spinach and topped with asiago cheese.
OMG those were good, I surprised myself.

Absolutely, you are just joking right.

I have been picking them for a few years and my wife just didn't like the look of them. Then last year she tried some of mine. Now she can't get enough.
They are only out for a short time in the Spring in my area. I will be going for walks in the bush every couple days to see if they are there yet.

I like portabella mushrooms to fry/sautee with chopped meat ( Chinese Hot Pot Style ) I also like Golden mushrooms. They are very thin long white/beige mushrooms that go awesome with soup.
