Grilled Lemon Garlic Chicken & Russian Potato Salad

I cooked supper for my wife and her sister tonight and tried a couple of new recipes that I've never cooked before. The main dish was grilled lemon garlic chicken breasts and Russian Potato salad. It was very delicious and I would certainly make it again in a heartbeat. If anyone is interested, here is the recipe.

Grilled Lemon Garlic Chicken Breast


4 boneless skinless chicken breasts
1 lemon
1 small bunch of thyme
4 garlic cloves
1/2 tsp salt
1/4 tsp black pepper

Grate 2 tsp of lemon peel. Chop enough thyme to equal 1 tsp and reserve the remaining sprigs. Into cup, crush 4 cloves of garlic with garlic press and add lemon peel, chopped thyme, salt, and pepper.

Rub mixture into both sides of chicken breast and let sit for 1 hour. Place chicken on hot grille rack over medium heat. When turning chicken on grille, squeeze fresh lemon juice over chicken breast. Once cooked, remove from grille and garnish with remaining thyme sprigs.


Russian Potato Salad


1/2 cup ketchup
1/2 cup mayonaise
Dash of Worcestershire sauce
2lbs of baby potatoes
1 cup of cherry tomatoes
1/3 cup of shredded carrots
1/3 cup of beets
1/3 cup of diced red onion
1/4 cup of fresh bacon bits
fresh dill.

Stir the ketchup with the mayonaise and Worsestershire sauce until combined. Combine potatoes, tomatoes, beets, carrot, red onion, and dill in a serving bowl. Garnish with bacon bits.


I made a dessert, which was also a first for me. I made grilled pineapple. I am typically not much of a dessert person, but I would HIGHLY recommend this as it was absolutely delicious.


Grilled Pineapple


1 x Pineapple, peeled and quartered lengthwise
1 cup of maple syrup
1 tsp of cinnamon
1/2 tsp of ground cloves

Peel and quarter pineapple and place in a plastic bag. Add maple syrup, cinnamon and cloves. Marinate for 1 hour up to 24 hours.
Heat Grill to medium high
Place pineapple down on rack and cook until nicely brown on all sides, turning every 3 minutes and watching carefully not to burn.
Serve hot with vanilla ice-cream and remaining marinade drizzled overtop

^ Sorry, no pics this time......it was a little hectic to say the least with my daughter saying "uppy" every two seconds. They are great recipes though, I'd highly recommend them.

That sounds good.

I never heard of ketchup in Russian potato salad though, I guess it is leaning toward Russian dressing. But, if it works, why not?


Ha, I just thought of my Aunt that used to eat ketchup on watermelon.

The chicken sounds heavenly and I might be trying that one this week I'm really trying to cook more often now.

The potato salad is a bit too out there for us but it sounds interesting. I might make it when we are going to a family function - I would be the only one in my house willing to try it. LOL

That pineapple thing sounds like a treat I will have to plan for Trey though - he loves pineapple.
