Personal opinion.....
Plasma is still the reigning champion for ultimate picture quality but size tops out in the 60 - 65" range. Plasma draws the most power and produces the most heat. We have a 63" Samsung plasma screen wall mounted in the media room and it's excellent. But as a gaming screen, there is always the worry about burn in. We have yet to experience a problem after two years. And our screen weighs almost 200 lbs. You need a hefty wall bracket.
LCD has come a long way in picture quality and is close to plasma. It also draws far less power and produces less heat. We have a Sharp Aquos 32" LCD wall mounted in the bedroom and it's fine in that application. No worries about games burning in the screen here. Leave an image on the screen forever. And LCD units are lighter and brighter than plasma units of the same size.
DLP projectors ain't so bad. We have a 60" Samsung DLP projector with an LED light source in the kid's playroom for video games and general use. The unit is less than half the weight of the plasma screen and only about 10" deep. Not wall mountable, but not bad. The picture is beautiful and the LED lightsource should be good for 10 years of use. Power usage and heat are minimal as the LED's are very efficient. But ultimately, the technical picture quality just isn't up to the best plasma or LCD units. Black levels and hot spots are some of the weak spots.
All of the competing technologies are good. It depends on what you want it for and how much you're willing to pay.
