Chili w/ Ground Beef and Ground Lamb
This is not a spicy recipe. I cook this for people who don't like spicy food but it is very flavorful nonetheless.
What you need: Ground beef, 1 lb. Ground lamb, 1 lb. Olive Oil (Extra virgin) 1 green pepper 1 can petite diced tomatoes Jalapenos slices, enough to taste. 2 cans kidney beans 1 med. onion 4 garlic cloves 1 bottle salsa (like Old EL Paso...Pace). You can use any spice level. Cilantro, stems removed Rice or Penne Noodles Extra sharp cheddar cheese Preparation Mince one medium onion and four cloves of garlic. Pour in olive oil into a pan. Brown the onions and garlic together over medium high heat. Once the onions are tender, add the beef and lamb and brown. After the lamb and beef are fully browned add the salsa, the petite diced tomatoes, and jalapeno slices. Cover pan. Cook on medium high for 10 to 15 minutes stirring occasionally. Then add the kidney beans, stir, turn heat to low, cover pan, and let simmer for 20-30 minutes. Prepare noodles or rice. Once the chili is done cooking, remove the pan from the burner, add cilantro, and let sit for 5 minutes. Serve immediately. Feel free to be liberally with the cheddar. ![]() This makes enough for three with leftovers.
