I'm sorry I haven't posted my favorite Indian recipes. I can't find my recipe book. However, since it's the new year and I ate like an oink-oink during the holidays, I'm going to start making healthy meals again. I deviated for 2 weeks. Here's one of my favorite healthy recipes: Gingered Chicken breast 1 tblspn fresh lemon juice 1.5 teaspoon grated fresh ginger .5 teaspoon freshly ground black pepper 2 cloves of garlic 4 boneless, skinless chicken breast halves Combine the lemon juice, ginger, pepper, garlic and chicken breasts in a deep bowl. Turning once to coat both sides. Cover and refrigerate 30 mins to 2 hours. Spray a large nonstick skillet with cooking spray. Heat the skillet on medium-high until hot. Add the chicken. Cook turning once, until tender - about 8 mins. I usually serve this w/ steamed broccoli or asparagus or blanched spinach. I usually coat 1 teaspoon per serving w/ Smart Balance butter or similar. Serves 4 Calories 129 Protein 29g Carbs 1 g Fat 1g Saturated fat 0g Sodium 7mg Cholesterol 65mg Fiber 0g
