Apple Chicken
2 ea Chicken breasts - boneless skinless
Salt and pepper to taste
2 Tb Whole wheat pastry flour or oat flour
2 Tsp Olive oil
1 Tsp Garlic - minced
1 ea Apple, chopped
3/4 C Apple juice
1/4 C Prunes, chopped
Instructions
Preheat the oven to 375 degrees. Heat 1 Tsp oil in an oven proof skillet. Salt the chicken then dredge lightly in flour. Brown the chicken for about 4 minutes per side. Remove and keep warm. Add the remaining oil, garlic and apples, and sauté 5 minutes. Add remaining ingredients and bring to a simmer, then return chicken to the pan. Place in oven and bake 40 minutes, turning chicken halfway through cook time.
