Found another recipe: I told you I got tons...of cook book
SPICY THAI NOODLES 1/2 pkg rice noodles, soak in hot water for 20 minutes 2 - 3 pieces chicken breast, sliced thinly 1 egg, beaten 2 Tbsp oil 3 Tbsp minced garlic 1 Tbsp chili flakes 1/2 cup chives, chopped 1 cup bean sprouts Sauce: 3 Tbsp ketchup 3 Tbsp shoyu 3 Tbsp fish sauce 1 Tbsp minced garlic 3 Tbsp oyster sauce Salt and pepper Sauté chicken pieces in garlic and oil till cooked. Season with salt and pepper and chili flakes. Add egg and stir vigorously. Add drained noodles; add sauce till noodles coated thoroughly. If noodles not coated enough with sauce, double recipe. Add chives and bean sprouts. Serve with additional fresh bean sprouts, chopped peanuts and lime juice. Garnish with cilantro.
