Pan Roasted Chicken w/ Garlic and Shallots
Here's a recipe I found and made the other night. It was pretty good!
What you'll need: 4 Boneless Chicken Breast (I use thighs and more than 4) 12 whole garlic cloves 8 whole shallots 3/4 cup white wine (preferably dry) Olive Oil Salt & Black Pepper 3/4 cup heavy cream Pasta (best w/ tagliatelle, pappardelle, penne, or rigatoni) -Preheat oven to 400 deg. F Place chicken w/skin and bones, garlic (removed from its paper like skin), and shallots (also skin removed) in a large oven proof pot/skillet. Add wine. Drizzle the chicken with olive oil -Sprinkle the mix with salt and pepper - Get Noodles ready - Roast until chicken is cooked through, 25-30 mins (longer if you use thighs). - Remove chicken, garlic, and shallots and pour the juice into a pan. Cover the chicken, etc. with foil to keep them warm. Then bring juices to a simmer over medium to medium high. Add the heavy cream and cook, stirring constantly - When noodles are done, place chicken, garlic and shallots over top of the noodles. Then cover with sauce when ready. Serve immediately Serves 4-6
