Salmon Sandwich with dill sauce
Dill sauce 1/2 cup sour cream 1/4 cup chopped fresh dill 2 cloves of garlic, minced 1/4 tsp salt 1/4 tsp pepper Sandwich 4 (6 oz) salmon steaks 1/4 tsp freshly ground pepper (optional) 2 tbsp. olive oil 8 slices of French or sourdough bread (or wheat) 1 shredded lettuce 1 large tomato, sliced 1. For dill sauce, combine sour cream, dill, garlic, and pepper in a small bowl, put aside. 2. Season salmon with pepper, brush w/ olive oil. Spray grill rack or non-stick pan w/ cooking spray. Preheat grill or pan to medium. Cook salmon, cover w/ lid for about 5 to 7 mins or until flakes with fork. Cut into thin slices. 3. Serve salmon on bread slices with lettuce, tomato & dill sauce. Serve 4 I only eat this once in a while about once a month or every 6 weeks, because it's high in carbs, but if you use wheat bread, the fiber can be as high as 5g.
