Heat canola oil in a large wok/skillet. Stir fry chicken until golden. For ease and speed saute half of the chicken at a time. Add garlic, ginger root, snow peas, pepper and carrot. Combine and add chicken broth, soy sauce, peanut butter, and dried red pepper. Stir fry until chicken and vegetables are coated with sauce. Serve with spaghetti or vermicelli or rice. (Rice is my favorite by far) Makes 4 servings |

Well Deane I made that recipe for the third time. We love it.
Karen said it was a bit too spicy this time, I added Cumin and more crushed red peppers. So I have to cut back next time. Still very delicious. YUM![]()

I tried this recipe this past Friday.
Hardest part: finding the ginger root at Ralph's. Verdict: Awesome dish. My wife loved it. I used peanut oil instead of Canola oil. I used 2 teaspoons of crushed red pepper and that came out to my liking. It's very easy too cook, prep work actually takes longer. Question: on this recipe it says 2 cloves of garlic. I took it literally and just dropped in 2 cloves, I don't have to mince them? Great dish, I'm definitely going to cook it again!

Tried this recipe last night and it was quite tasty. I used two peppers (one red and one yellow) and replaced the carrots with sprouts. We overdid the crushed red pepper a bit....normally we add the crushed red pepper to the oil when we start stir frying, and can judge how much we need based on the smell, but when we added it at the end, the smell wasn't as strong so I was like "well, let's toss some more in!" Needless to say, my lips were burning by the end of the meal, but it was good....we will definitely try this one again!

I finally got around to trying this on Sunday and it worked out great! I added some diced hot peppers, some extra garlic and ginger and some prawns and everyone seemed to enjoy it.
