My Butter Chicken recipe.

Two boneless skinless chicken breasts
1 can of tomato sauce
1 cup of whipping cream
2 tbsp garam masala
5-6 cloves of garlic
2 tbsp ginger
1/2 tsp turmeric
1 tbsp lemon juice
one onion finely chopped
5 tbsp of oil or butter
2-3 bay leaves
one cinnamon stick
1-2 cardamom
2 tbsp kasuri methi
2 cups plain yogurt

Step 1:

Grind into a fine paste (ginger, garlic, lemon juice, turmeric) and marinate the chicken along with the yogurt and salt (as per your taste). Marinate over night if you can.

Step 2:

Heat butter or oil. Add bay leaves, cinnamon stick, cardamom, and onions and fry until the onions are almost golden brown. Add marinated chicken pieces and fry it until the oil separates (usually if you have it on high then keep stirring intermittingly so that it does not stick to the bottom.

Add the garam masala and stir for two minutes. Add the tomato sauce and the whipping cream. Add additional salt as per your taste and the kasuri methi.

Put the lid on and keep it on low for 35-40 minutes. It should get thick and creamy.

Cumin Rice Recipe

1 cup basmati rice (for each cup of rice add two cups of water)
1 tsp of cumin seeds
1 tsp ginger
salt as per taste.
Put in rice cooker and let it cook (or on the stove top)

I had Butter Chicken tonight along with Aloo Gobi and vegetable samosas. The samosas tonight were not homemade this time though like they usually are. Not exactly the healthiest of meals, but it was darn good.

Damn, you've put me to shame, that looks fantastic. As a brown man, I feel I should be doing some cooking. But then, my folks are coming for a visit this weekend and I'm sure my mom will be bringing lots of good home cooking.

Looks like I'll have to make it my own self, though she did make on of my faves - oriental cabbage salad. Maybe I'll surprise her one day soon. Looks so good!
