El Pollo Campero "Guatemala Country Chicken" Recepie copy
For those that don't know of this chain from Guatemala, they opened around 17 years ago in latino areas of Los Angeles when the first store opened people waited 5 hours in line to get it. Some people ordered extra chicken and sold it to others waiting in the back of the line for a NICE profit. 1-3pound chicken cut up into 8 pieces 1 teaspoon Ground Cumin 1/2 teaspoon Fresh Ground Black pepper juice of 1 fresh squeezed lemon 2 tablespoons dried oregano 3 large cloves garlic crushed well 2 tablespoons kosher Salt 1 cup plain cake flour vegetable oil 1- Sprinkle chicken with lemon juice, garlic, cumin, oregano,salt & pepper Mix well store in covered bowl overnight in refrigerator 2- Heat oil about 5 inches worth in a Wok or deep pot to around 340 degrees 3- While oil is heating, dip chicken in flour, shake off any excess 4- fry chicken 4 pieces at a time don't crowd the pan or the oil's temperture will drop and you'll have heavy greasy chicken anyway fry turning once around 6 minutes per side until golden brown. Pull chicken out with tongs or Chop sticks. Drain on paper towels...... Enjoy!
