Islander BBQ (it's a mix of chammoro and filipino style)
![]() BBQ: 2 racks of pork ribs 3 lemons 1/2 cup of coconut vinegar 1/2 cup of Oyster sauce 3 large onions 1/2 head of garlic 1 cup of soy sauce BBQ: -trim rack of ribs by cutting the tops off the ribs and cutting into 3-4" pieces. cut the rack into sections of 3 bones per section. place in a large deep container. Cut onions into hamburger style rings and smash up garlic and throw both into container. squeeze lemons onto the ribs and combine with vinegar, soysauce and oyster sauce. mix and let it rest for a few hours, it's better if it's over night. remove ribs and place onions in a different container. grill ribs on one side till brown, flip and brown other side (should be about 5 mins each side) now remove ribs and cut into individual pieces. throw each rib back into marinade and leave covered for about 15-20 mins. In the mean time, grab onions and place them on foil and let those cook covered. once those are about done, throw ribs back on grill and brown on all sides. serve with rice and finadeni. Finadeni (the side sauce that goes with the BBQ) 1 diced roma tomato 1/4 cup soysauce 1 lemon 1 tablespoon of coconut vinegar 3-4 diced thai bird chilies 3 cloves of smashed and diced garil -combine all ingredents in a bowl, and dip your cooked BBQ while eating. some people put it on thier rice. yum! |
