Rick's Beer Batter Fish and Chips!!
I have been making this for several years now and its time I shared my recipe:
2" x 4" (1/2 thick) of your favorite Filet (I personally love Cod) -sprinkle a little salt and pepper in both sides and let sit for about 5 minutes -then pour about 1 cup of All-Purpose flour (based on how many Filets your frying)..onto a flat plate -then coat both side of the fish and let rest on another plate BATTER-(into another bowl) -1 egg (Just egg white) Wisk until enough air and flip bowl upside make sure it does nt fall..LOL Then into the same Bowl -1 cup All purpose Flower -1/2 tsp baking powder -1/4 salt 1/4 pepper -1/4 Cayenne pepper (Sirachi Hot sauce will work also Tobasco) -1/4 Garlic Powder 1-2 Bottles of your Favorite Ale..I use Sam Adams and Wisk away!!!...No lumps, should be smooth OIL: I use Canola oil or Vegetable oil in a fryer...pre-heat to 325 Degrees... NOW: Take the fish and dip in batter and SLOWLY dip into the fryer until golden brown...Drain onto paper towels. CHIPS (Fries) -Whatever potatoes you want to eat..cut into wedges (like potato wedges from KFC)....Coat the in the SAME All Purpose flour as you did in the fish...and Fry...Salt and pepper to taste. HOMEMADE TARTER SAUCE: -1/2 cup Mayo -Thinly sliced and DICED pickels (SOUR not sweet..and NO RELISH) -Salt and pepper to taste -1/2 FRESH lemon -3 drops Tobasco Mix all together and enjoy!!! |
