Queso

anyone have any good queso recipes?

I love the white queso you can buy @ Mexican restaraunts, but never knew what they made it with. I've tried Velveeta & rotel but its not the same.

Queso's the bomb but I honestly don't know any good recipes for it. My roommate is Mexican though and has killer recipes for guacamole and other traditional Mexican food. I'll see if he has any recommendations later on when I get back home.

what is this 'Queso'?

I know in Dominican cooking, we have Queso de Freir. Pretty much, it's a thick block of fresh cheese that we deep fry. It's f'ing delicious. I haven't found a place that sells it out here in LA though, so I have to get it shipped from NY.

what I'm referring to is white cheese dip. I can never even get velveeta to be heated to the right temp. to get it to as fluid as the restaurants, mine goes cold in a few min and gets all 'lumpy', compared to the queso I get at Mexican joints that you can eat after your meal.

sorry for the resolution, but this is what I'm referring to (in this pic, you can see its gotten a little cold and parts of the top are thicker than normal)

mmmmmmmm queso's bomb....especially the kind that are a bit chunky with goodies inside...

I've seen people make it, they use a combination of cheese and heavy cream I believe, in order to get that texture. I don't know the details but I hope someone chimes in.

Im mexican and its simple to make this but the "kind" you want might not be the one so i did a search for "white queso dip" here ya go...


White Queso Dip
1 c. Monterey Jack cheese chopped fine
4 oz. green chiles in can chopped fine
1 Serrano pepper med. if fresh you need to blister skin in broiler for six to eight minutes , pull skin from flesh, chop fine
1/2 tsp salt
2 tsp ground cumin
1/2 T cilantro chopped very fine
1/4 to 1/2 half & half cream you add for what thickness you like.

Directions
Put all in a double boiler on low to med. heat till all cheese melts.
Stir occasionally. Good with fresh vegetables, baked potatoes.
Serve with fried tortillas, Dorito chips.
If you like with a hot taste, add green Tabasco to your taste.

you should try Queso Fundido....its really good but not very healthy...lol its a good appetizer...

Ingredients
  • 1 small round chihuahua cheese
  • 12 oz. ground chorizo
  • lime wedges
  • 2 diced jalapenos, seeded if desire less heat
  • 2-3 diced tomatoes
  • chopped cilantro
  • corn tortillas or tortilla chips


Directions
  1. Preheat oven to 400
  2. cook chorizo on stovetop until almost browned; drain; set aside
  3. dice tomatoes, jalapenos and cilantro while chorizo is cooking
  4. place cheese in an oven-safe dish, cutting in pieces to fit the bottom of the dish (cheese will melt and cover the bottom once it goes into the oven)
  5. place cheese in the oven for approximately 7 minutes or until cheese is almost thoroughly melted
  6. remove from oven, top with chorizo and return to oven for another 7 minutes
  7. warm tortillas in microwave
  8. remove cheese from oven and serve immediately
  9. queso fundido is best eaten in a warm tortilla with some tomatoes, jalapenos, a bit of cilantro and a squirt of lime - enjoy!

I asked at the mexican place and they said all that it is white american and milk and halopenos. Its very simple. Some use half and half.
