Portobello mushroom sandwhich
My mother works for Monterey Mushroom so i get plenty of cases of mushrooms to practice with. I figured this is a relatively easy recipe for a very tasty meal for those that are mushrooms fans.
I dont do amounts as in cups, tspn, and such im a to taste kind of guy.
Clean your portobella by chopping the stem off and cleaning out the "fuzz" from under the hood. Drizzle a lil extra virgin olive oil on the cap and rub to moisten the entire cap and season with salt and pepper. Cut your cap in half and then wrap it with two strips of bacon so that the entire cap has one layer of bacon around it. And then again with the salt and pepper. Put this in the oven on 375 degrees for approximately 15 minutes (use a pan with edges) i did it on a cookie sheet and had bacon juice on the bottom of my stove! get yourself some romaine hearts for your crisp along with a tomato to complete that fresh taste and dress up your grain bread (i chose 12 grain). dress one side of bread with horseradish or spicy deli mustard, then romaine, then tomato and layer your two mushroom cap halves onto the pile and serve.
Simple, vegetarian, and cheap.

Time - 20 mins
