How about any of your options but with NO rear speakers at all. Keeps the soundstage up front. If you must have rear speakers, install the 6.5 side speakers for a bit of rear fill, but keep the volume low. I think that will sound the best.

I really don't like MB Quartz they are over rated and suck. Infinity Kappas are good so I've heard. Iwould go with CDT or Elemental Design. Your amp and sub choice are good.

I don't run any rears in my personal vehicles.
Replacing the 6.5's in the rear 1/4 panels will help bring the vocals volume up slightly while maintaining decent imaging for the front and rear passengers since they are lower in the car...I would just attenuate their volume/power and cut out more of their highs...

Replacing just the 6x9's will help you be heard outside of the vehicle if that's what you want.

The premium series from MB quarts are the only speakers from Mb quarts that I like. I am not a fan of any other series they have available, even the Q line

Just remember everything is dependant on how you tune the system...

I would do:

JL3004 on the PCE 216 biamped.
the XR line from JL is also a smooth sounding speaker setup!
Jl5001 on a JL12w6v2 or even a
JL2501, 3002 on a 12w3v3!

and an Avic Z-1 in for good measure =D
