I got a bbk installed on my car, however only the front. A shop did the install for me so I am not sure how much work went into them.
Within the next month or so I am looking to purchase a set of STOPTECH ROTORS for the rears (non-brembos) to fit the OEM calipers. Is a rotors only install as demanding? Will I have to bleed the brakes and whatnot?

At this point stoptech does not offer a stage 2 brake upgrade (2 piece rotors) but give us a call we can help you out. However this is ONLY if you have an 05+. If its 03-04, we can easily take care of it!
Rear rotors are easy to swap. Remove the two 19mm bolts holding it onto the hub and lift the caliper out of the way. You don't need to break open or remove the brake line. Make sure your parking brake is OFF and pull the old rotor off. You may need a rubber hammer to beat it from the rear if it is stuck on there, which I have experienced.
Install the new rotor and reinstall the caliper. You may have to spread the brake pads apart if the old rotor is worn, which will make the space between the pads too small for the new rotor. But you may not have that issue.

If you don't open the brake lines and let air in them, there is no need to bleed the brakes.
However, everyone should replace their brake fluid once every year or two. Brake fluid is hygroscopic and absorbs water, which will decrease braking performance.
