I installed the Stoptech Stage 2 kit last year which included the 3 bottles of Motul Racing Fluid. Anyone know what the interval I should be changing that at or how to check the color (it's different than the stock stuff)?

At least every 2 years, and every year if you can. Brake fluid absorbs water relatively quickly, and that lowers the boiling point.
