sorry but i am curious and may sound like an idiot but can't we use those 2 piece rotors from endless, brembos, etc which are the same 355mm/32mm ??

wont they fit?

There are no stupid questions, just stupid people Quoting South Park, don't get mad a me

But let's be serious here, I have 1 answer to your question, offset Discs might be the same size, but the hats are offset to fit the position of the caliper, I've already tired a Stoptech 350Z 355mm Setup, way off!!! But don't worry, I have something up my sleeve... For the fronts that is, the rears are hopeless

Emergency brake is back there. It's a drum style e-brake and it occupies a good portion of the center of the disc. It's the majority of the mass of the system.

Nobody makes a disc in that size yet, once it's avialable, then we can make it no problem.

Does anyone know how much the OEM rear rotors off of the 05-07 G35 Coupe and the OEM rear Akebono/Stoptech rotors weigh?

For now, considering that 2-piece rears seem to be nowhere in sight, I would be happy with front 2-piece rotors and stoptech rear rotors.
