The G35 engine is so easy to clean. This video is really good.

Do you guys remove the underbody tray when cleaning the engine or does the water drain properly with the tray on?

It should drain fine...it pitches to the rear slightly i think.

Even if the there is water still there, its going to move with the force when your driving.

Actually, it's totally ok to use the pressure hose. The key is to obviously cover your aif filter and can pretty much blast most things in the engine bay. Timing cover, fenders, hoses are all no prob. I do detailing and have cleaned an endless amounts of engines and have NEVER once had an issue. You don't want to keep the pressure in one spot for a prolonged period of time but you can use it. Here's a sample of a friends engine I cleaned.
