I don't like gloss either. I like the interior to look like how it came from the factory.
The 303 is an excellant product. I have used it on interiors and on my tires. It is probably the lowest gloss you can get, but it still adds a little gloss. It is also supposedly the only such product that actually "protects" surfaces.
I used it on my BMW dash and it looked very natural.
I just used it on my G coupe for the first time over the week end. I did not like the results as much as on the BMW. I used it on the black dash and vinyl door parts on the G. It made them darker and a little glossier. Thus you have to be careful to work with a lot of light and be sure to put it on evenly (or you will see where it is and where it isn't). Also do not get it on the plastic parts or you will have to put it on all of the plastic to make it look consistant. So, you will have to decide if the supposed protection is worth the slight gloss, etc.
I also used Lexol leather conditioner on the G leather seats and it was invisable once dried.
Conditioning the leather is necessary maintenance; the need for the dash protectants is probably questionable.

It's not locally available, but Griot's makes a good interior cleaner that cleans all the surfaces, except the leather (supposedly it will, but I use Lexol). It doesn't leave any gloss that I can see (I have the willow interior). It is also good for getting light stains out of the carpet.

I follow with the 303 protectant, which also doesn't seem to leave any gloss on the lighter interior.

After both, the interior looks almost exactly the same as it did when I brought it home.
