How long to wait for new engine???

Took my car in for an oil change (always took it to dealership) and noticed that my oil level was way low. I usually have the oil change about every 5k miles.
Question to those that had their engines replaced already:
I took mine in for the first 1k and the dealer said that oil consumption looked ok. I'll be bringing it in for the next 1k for the next check.
Does this issue occur right away or is it gradual? I have a 05 6mt sedan with about 23k miles.

My 06 I have noticed strange noise at about 40000 miles and the oil consumption after first oil change (had to put 4 quarts to make it till 2nd oil change)
My 07 (more experienced now at this) I have noticed it at 1800 miles and again at 2800 Both times dipstick didn't register + I hard engine rattling

Finally received my engine and it only took them one day to install. The V2 is much much smoother then what came out of my car. That could be due to the fact that my old engine probably was running low on oil before they took it out. Either way, much happier with this new motor so far (400 miles).
