Exclamation Jerking(Misfire) and 5th and 6th gear only?!

Ok so to start, my car has a lot of miles 202,000... It's a 6Mt. I have replaced a lot of parts lately. Here is the list:

All Spark Plugs
All Coil Packs
All Injectors
Both Valve Covers
Both Cam and Exhaust Sensors
Busted Out Catalytic Converters (inside)
Both Upstream O2 Senors
Recent Oil Change and Filter.

My car's Spiral Cable and ABS Relay Actuator is bad and I will be ordering a new ones soon.

HERE'S THE PROBLEM...
My car, while in 5th or 6th gear will start jerking mildly when I put the motor under load. When I put slight pressure on the gas pedal this does not occur. No matter how hard I press the gas pedal, it will jerk or misfire if I'm going up a steeper incline. Yes my CEL starts blinking during the jerking. The weird thing is... when the cars jerking is, while in 1st, 2nd, 3rd, or 4th gear the car runs great and I can redline it without any lag. Except one or two times when it had a slight stall then just took off like it should. I'm at a loss... can anyone help?

Try looking at the freeze frame data if you have a scan tool. See what the fuel trims look like to see if it's running lean/not enough fuel. Could be your fuel pump starting to go out.

Did it do this before you did all that work?

I forgot to mention, the fuel pump is only 3 months old. I did hook it up to a computer and watch the freeze data however I forgot the numbers and will look at again in the next few days. It was having other problems before the new parts, but ran great for the past few months. I recently hit a deer and it busted the front headlig but assembly and dented the front hood a little. Not much damage, and I dont know of it's relevant but about a day or two after hitting the deer I started to notice my current issue

Also, what's a normal range for both fuel trims?
