Big question

Could I engine swap my 2003 g35 with 177,000 miles for a “98-05 Toyota Lexus sc300 3.0l inline 6 vvti engine jdm 2jz-ge”? And if I do will it fit my manual transmission?

No it definitely will not just bolt in.

Typically engines are mated to a very specific transmission, the bellhousing bolt pattern almost never shares the same pattern with another vehicle.

Now you COULD powertrain swap, if you were willing to make custom motor mounts, custom transmission mount (or possibly buy an adapter flange since the Nissan CD00# transmission was incredibly popular and they made a lot of adapters), as well as swap the Toyota ECU.

You will lose a lot of functionality that typically goes through the BCM like power locks, windows, etc. Much of this can be rewired with a 12v-5v transformer to provide the necessary voltage to switches and components.

Personally I would never consider this swap, there are only two viable swaps for the G35 that have most of the components readily available for purchase. LS swap, and HR swap.

Anything else is a SIGNIFICANT amount of custom fabrication and wiring, judging on the fact that you asked this question in the first place makes me think it's probably beyond your skill level unless you're willing to do a LOT of research.

If you feel comfortable wiring a car for a standalone ECU (as well as road tuning it) and you are comfortable with your metal fabrication to be able to create custom mounts then yes you could probably pull the swap off.

Yes. Swapping to ANY other engine besides the VQ35DE will require you to get another transmission. Or a bellhousing adapter kit which is usually the same price as another transmission...
