There will be no noticeable difference between the years. You could swap out your seat for a sedan seat. They are wider and flatter and might be more comfortable. It will bolt right up, but depending on the year and accessories the sedan seat came with, you might have to do some minor wire splicing as the connectors might not be plug and play.

I believe in either the '05 or '06 model Infiniti included the memory seat options and added an additional seat control option too.

The 06 was the first year for memory seats. But otherwise the 03-07 Coupe G's are all pretty much the same seats. They're naturally curved and are supposed to hug your body. Dropping a few pound will make a considerable difference. It will also be alot cheaper, arguably less work, and won't make your car interior look odd by switching to a sedan style seat. I'm 6'2" and weigh about 185 pounds. When I don't wear a coat, the seats fit fantastic, however adding a heavy winter coat and the seats are noticibly more difficult to get comfortable in. You're a bit shorter, but quite a bit heavier, so I imagine dropping even 10 pounds would make a substantial improvement.
