I am about to take my car out of storage, and start my suspension work (lowering / adjustable arms / rods)
I had planned to go and have it aligned (or at least confirm the current setup) so they can have stock numbers to work with when doing post-lowering alignment.
Due to Covid-19, the shop is closed indefinitely, so I dont have that option now.
Is it even worth doing a pre-lowering alignment to have "original" numbers to match up to?

No, because you're going to be changing the alignment anyways. Just know ahead of time what you want your alignment to be, if you want it within OEM spec that's easy because it's listed in the FSM and their alignment spec book. Just make sure they set front toe to the MAXIMUM value listed in their book which should be 0.04 per corner for a total toe of 0.08.
Camber depends entirely on what you're using the vehicle for, daily driver non-track use I liked -1 front -0.75 rear. Track use I go pretty aggressive with -2.5 front -1.75 rear (strongly recommend never going more in the rear that's about as far as you want to go otherwise you're going to start losing the rear in corners). Your sway bars and springs makes a HUGE difference in what your camber will be on the track, I'm on the stock '06 sways and 350Z revised springs.

Not tracking it at all, is semi daily at best (summer car, fair weather only) so will go with your recommendation for daily setup.
For reference using KYB with HR Sports, Hotchkis sways front and back, and Kinetix front a arms and rear traction bars... Rubber is 225/40/19 in front and 275/35/19 in rear.

You'll probably get a lot of recommendations for the alignment setup and to go more aggressive in the rear, I think the rear recommended is like -1.25 but what I found on STOCK TIRE SIZE the car turned too easily in the rain if you were driving aggressively and taking camber out really helped give the car a very predictable/neutral feel when hitting wet corners pretty quick (highway off ramps and stuff like that where you're decelerating quickly and pulling a corner pretty hard). This is going to depend entirely on how you drive though, you can always change the alignment again in a year if you aren't completely happy with it. I have a spare tire/jack and probably an additional 25 lbs worth of stuff in the trunk.

Who knows when the shop will be open with the craziness going on ion the world, but at least if IM stuck at home I can start working on the mods.
I typically store it at home but I moved late november and car is off road by Nov 1 annually so it hibernated at my folks place this past winter.... Insurance went back on yesterday, taking her home saturday... cant wait
