I'd think it would take at least a few days....at least for a quality shop to do it. And that's if they start working on your car right away.
They'll have to prep by sanding first, then paint, let it set up, wet sand, and then buff.
I'd also expect a bill anywhere from $400 to $1000 depending on the shop and quality of work you want.
EDIT: At least that might be the figure in the northeast. I know southen shops tend to have cheaper labor rates so costs could be lower

The time it takes to paint the roof depends on a few things. Where, temp, and clear.
If you take it somewhere that can bake it or uses 1hr clear it could be done in one day. Usually it will take a min of 2-3 days. A sunroof is a factor. All good shops will remove any molding that is on the panel to be sprayed. That might factor in cost but not much. If they can lay the clear down slick they might not have to sand and buff but most usually will sand and buff to match factory finish. If its 1 hr clear and temp is right they can sand and buff bout 3 hrs after its sprayed. If they bake bout same. Otherwise it needs to dry atleast 12-15 hrs at about 70 degrees before it and be sanded and buffed. It shouldnt be more that 3-5hundred no matter where you go. There is a standard amount of hrs it will take to be painted and most labor rates for paint are no more than 50hr.
