I've always found it odd that my 03 G35 sedan doesn't have a flapper door on the fuel filler neck where you push the fuel nozzle through. Every other car I've owned has this flapper door. Is my G an oddity or are they all like this?

My 05 has no flapper either (just went into the garage and looked).

does infiniti make a locking gas cap?
I was a little scared when I walked out to my car and the fuel door was open and the cap was hanging off

You were probably all in a rush the first time you pumped her, but your ride loses that little protector when you push the gas nozzle thru for the first time.

p.s.. In all seriousness, I went the Dr's office on Friday AM and locked the G. I had about 1/4 tank. When I came out and started her up, I threw a CEL. Scared the hell out of me (been doing a few mods lately) Anyway, I then noticed my gas light on, so went down the street and filled her up. Gas cap was loose and came off at my touch. Was a little concerned, as well as confused. Had gas, then didn't. No CEL and then I get one. Confirmed it was attributed to gas cap being "off". But I did lock the car and confirmed the gas door does lock with the doors.

Some modern cars with return-less gas systems will throw a CEL when the gas cap is not on. The system can detect the improper pressure in the fuel tank.
There's a lot of variations but, generally speaking, don't drive around with your gas cap off and your gas door open
