Only 03/04 have black interior.
I'm not sure if they offered Stone in the 05-07 years, but the majority if not all have the wheat interior. Infiniti stopped offering black as an option for Ivory Pearl after 04.

06-07 comes w/ stone interior(very rare esp 6mt) or black dash and wheat seats

My 05 has a black dash and stone interior. I think its a nice combo.

I wasted a lot of time looking for an IP 05 up with graphite...what a waste of time. Now stuck with the tan interior and black dash. It has some getting used to. I love dark interiors.
