Hey! Name's Luke and I picked up my first G35 yesterday 
It's a 2004 6mt and I absolutely love it already.
I also have a few questions...
I've been doing some research, but can't find the answer I'm looking for... Which exhaust systems are CARB legal? Any input?

What up Luke! Congrats on the getting a G, you made a wise decision.
As far as carb legal, there is no such a thing for an exhaust. Exhausts do not contribute or affect the amount of pollutants that come of your engine. The only thing an exhaust does in "muffle" the sound...hence muffler.
So basically anything after the cat does not need carb certification.
Now what you should be concerned with is sound level, in California it must be below 95 decibels. The Nismo exhaust is a good choice if you want to keep sound levels in check but have it slightly louder than stock.

^ Correct. Exhausts (catbacks) don't require CARB certs.
Intakes, etc do.
