cooling/overheating

We've had our '06 G35 for a year and a half. Mostly trouble free, and as it is used, we appreciate that so far.
However, recently I had one cooling fan freeze up.
I replaced the entire unit, figuring one fan motor gone at 150k miles, the other may go anytime.
Regardless...both fans now run, seemingly normal as before, one starting very soon or as soon as the a/c starts, the other when the engine heats up..both going to higher speeds as the heat increases.
The problem comes thus: as I drive, the temp rises more and more, eventually reaching almost the overheat point...and rather than take any chances, I have been turning the heat up to full, at which point the temp will drop down slowly, and eventually return to a normal state. I don't have to have the fans on to make this work. As long as the heat temp is set to max, the temperature gauge will show engine heat in normal range. If I change it back or go to a/c, it heats up. Of course, if the ambient temps are in the 80's, I do have to turn on the heater fan...and oh boy does the heat come in! I get far more heat than I need at this time of year from the heater, even with the fans off or at low, and will soon need a/c...
I have bled the air, checked the water pump, etc.,etc,...but still the temperature rises.
I'm temped to simply remove the thermostat as a test...replacing it with a new one if that fixes the problem.
Any other suggestions?

Did you check to see if your radiator cap is holding pressure?
