Some carriers will let you buy it back, others won't. They will claim issues with liability (which can go either way). All depends on the company. But you will be responsible for getting rid of the car after you are done, as well as any costs associated with it. I would try to deal with them to get your aftermarket parts and let them handle getting rid of the car, it will be much easier on you.
I guess I agree with Paul on this issue.

My insurance co. was going to total one of my cars and I was able to buy it back at salvage price. The good news is that since they didn't total the car there is no indication of a salvage title.
I got money from my insurance for damages which I put towards another car and it cost me $200 to buy back the damaged car. I ended up doing the minimum work possible to make the car safe to drive, some cosmetic work and pulled off all my aftermarket equipment and sold the car for a profit.
I know every case is different. I thought I would let you know what happened in mine.

I had an opportunitity to buy back my stolen and found stripped 68 Cougar XR7 302 w/ port and polished V4 heads, decked out, Center Line custom rims for $50 bones (though, all that $$ stuff was gone).
It was to emotional for me to have back, rebuild it and have a stipped POS looking vehicle in my driveway while rebuilding her.
I let it go as hard as that was.
