I know you want to please everyone and trying to be considerate but it wont ever work (how many dates you have picked so far?), Just pick an date and go from there, if someone cant make it? OH WELL!!! 
, You cant keep on changing dates for just that one certain person, cus there always going to be that one person cant never seem to make it, no matter what date it is.
If you do pick a date thats couple of weeks away? might want have a back up plan, cus the weather, maybe want to meet up at indoor parking lot/garages like Newpark Mall...ect and be clear if the meet going to happen rain or shine, or postpone it till following week.

I have to agree with Shane here. The best thing to do IMO is to set-up a poll and see which day wins out. Then go from there.
