you basically need to cut a nice square bigger then the whole latch so that you can get your fingers/wrench in there to hold the washers & nuts

You should have taken a pic of how close the screw holes are to the edge to show why the big cut out needs to be perfect
Ill take one maybe today is I remember

ok here you can see how close the holes are and why you have to be very careful you can see on the bottom left I got pretty close to the edge

its a very tight fit for the latch so dont even try to widen it a bit cause then the screws wont grab anything

^ its not rice at all it is a saftey issue. Doing track days and other high speeds is begging for trouble with out hood pins
