Cruise Control Not Steady
I have had several Nissan's and 1 other G35 so this is not right to me.
While on cruise control the speed varies by 5 or so MPH on hills.
Going downhill it coasts but does not accelerate until I am 5mph under the set speed going back up-hill
Same for going up hill-no acceleration until I get behind 5mph
Is it time to take it to the dealer?

Do you have Intelligent Cruise Control or the Standard Cruise control? If you have the ICC, the speed will vary based on your distance from the car in front of you.

To the OP, manual or auto? We have an 08 G35X auto and it's rock steady on the set speed unless I have ICC switched on. In which case it blissfully removes me from the whole brake, resume, coast, accel loop caused by idiots who can't maintain speed on a highway. The 5 spd auto will downshift/upshift as needed to maintain speed. If you've got a manual, is the RPM drifting outside the powerband in the gear you've chosen on steep hills?
Funny but I remember an effect like you describe in all Japanese cars from the 80's & 90's. They would always drift a few MPH above / below the set speed while domestic cars would lock onto a speed and stay within 1 MPH. I assumed it was a design choice in Japan since they pretty much all did it. But, I haven't encountered that in years.

I have to say I experience the same exact thing with my cruise control!
I just traded my '07 G35 Sport with ICC for an '08 G35 Journey without ICC. The '07 with ICC was rock solid on cruise control and never faltered uphill or downhill. My '08 without ICC struggles with consistency both uphill and downhill.
