Not really, I have yet to see anyone going 40 profile tires on their aftermarket 19s and anyone who ran out of thread on their stock 19s they always make a thread like this.

You don't get it, the stock 245/40/19 that you say looks truckish has the same sidewall height as a 275/35/19, so wouldn't that mean it looks like a truck also? Thats the most common aftermarket tire size used here in the rear.

I'm running 265/35 and 245/35.
If you really wanted to, you could probably shoe-horn a 295 or 305 on there, but it would look like $hit.
My 265/35 has a straight sidewall as do the 245's up front.
Have the shop fit a 275/35 and put the car down and see if it bulges out or not.

A 245/40/19 on an 8.5 has about the same amount of stretch as a 275/35/19 on a 9.5. I've seen plenty of these setups, and they look the same height. Even stretched the height difference is minimal. Sounds like you are seeing things other than sidewall height

^u might be right about the speedo inacuracy and stuff but as far as ABS/VDC goes u are completely wrong about that. I have never had any issues with neither of them with 255/30/19s. VDC (When its on) will only come up when the tires lose grip.

Guys, the choice is between a 265/30/19 and a 265/35/19, stock mine are 35 sidewall's also, i just checked!
possibly a 275 tho.
