It really depends from region to region. The shop I work at is located right outside of San Francisco. Our labor rates are about the same if not a bit cheaper than most dedicated independent car audio shops in the area. Of course there are shops that will work for cheaper, but they are typically tuner shops that do more than just car audio.
Anyways, if you were to bring me all your own equipment, this is how I would break down the labor rates.
-Front component speakers: $85, $100 if a spacer is not provided.
-Rear 6x9's: $75
-Mount subwoofer in box: $0
-Subwoofer amplifier installation: $85 (assuming you also have the bass control **** (RBC-1))
-4 ch amplifier installation: $100
-In regards to sound proofing your vehicle, we would charge by the hour, which is $75/hr. I would estimate about an hour on the front doors (assuming you have a coupe) and about an hour to do the trunk

Doing it yourself is always an option, however it is not for everyone. Alot of the work itself is pretty basic, but time consuming. Example. In order to replace the rear 6x9's on a coupe, you have to remove the backseat, side panels, seat belts, rear deck, etc.
What I would not recommend someone without experience to do, is adjust and tune the amplifiers. Especially considering that they are JL slash series amps.

I agree the tuning can be very confusing but there are many guides to follow such as: http://www.caraudio.com/forum/showthread.php?t=206371
but then again some people just dont want to install things themselves whether it be they dont want to fiddle, they lack confidence in their abilities, they dont have the time, or if they just have enough money where they dont need to :P
btw i wish i was the last one even though i would still install and just buy more mods
