couple of questions
My vote is for head unit.
The iPod functionality will be 5x better than an adapter, and with the fraility of the factory head unit, it's possible that it won't last much longer in an '05.
Especially where you want to hook up a sub too, it's definitely the more expensive route, but in the end I think you'll be happier with a good headunit.

Yea I know it will be the more exspensive route. Probably around $600 before its all over. Ive been doin some research and it seems like the jdm double din adapter kit is the way to go. So, where do I find one of these things?

you can check out the marketplace people are usually selling the DD kits and if not head over to riverside infiniti if they have them. the DD kits usually run at $200.
Metra DD kits may run $200, but I haven't seen a (new) JDM go that low.
Riverside directly, or through their eBay auctions.
After $300 for a JDM, that $600 doesn't leave much for a good headunit, but Pioneer 4100 and 4200's are a good choice if you don't want navigation.
