Coilovers are technically any spring/shock combo that are aligned around the same axis as a single assembly. Most factory suspensions on passnger cars use coilovers.
Popularly in the tuner scene, coilovers have been used to describe adhustable height systems that use adjustable collars to change the spring perch height, which changes the ride height. I'm sure this is what he meant.
But, the rear suspension does not use a coilover system. The spring is located on a separate axis. There are adjustable spring systems for the G35, but they are technically not considered coilovers.

i am also having the same issue i think, although i don't feel like my audio system is very heavy(probably around 80lbs max, maybe less), i have noticed that the rear looks like it's sagging and it looks like i have more negative camber on the rear wheels as a result.
is the suspension really that sensitive to the addition of weight in the trunk?
