How close to stock it will be?

Nothing will ever be as close to stock. When you lower it you raise the spring rates for better performance which stiffens it up a bit. Then larger wheels with smaller tires have less sidewall to absorb the bumps in the road.
If you want to be close to stock stay with 18" wheels and get coupe or 350Z springs. That will still have a pretty good ride. Another option is Tein CS coilovers, they have a nice ride and allow you to adjust the height of the car. I have them on mine. The down fall is that they are expensive.
