How much should I cut my rear spring mounts.

Ok, sorry if this seems like a noob question. But I really dont want to mess this up. and I would like to get some second opinions.
I want to make the ride height even. But I am curious what it "looks" like I should do. Also how are you guys measuring to make sure its even, I know some people measure the fender to the ground. but how do you make sure you're on a even surface?
Thanks for the help guys!

(sorry for the cell phone pics)
